Seitan Sausage Bites (vegan)

This recipe makes about 4 servings of sausage bites that work well with mushrooms and onion or ground up as part of a dish.

My personal favorite is to cook them with red cabbage, onion, garlic, and mushrooms.

Dry Ingredients

  • 1 cup vital wheat gluten
  • 1/2 cup soy flour
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp ground sage
  • 1 1/2 tsp fennel seeds
  • 2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Wet ingredents

  • 1 cup water
  • 1/2 tsp msg
  • 2 T ketchup
  • 1 T soy sauce
  • 2 T syrup (sugarless if you want this to be low carb)
  • 2 T vegtable oil

To cook

  • 2-4T of vegtable oil


  1. put all the wet ingredients together and stir until well mixed
  2. Put all the dry ingredients into a bowl and combine
  3. Add the wet ingredients to form a dough and knead for 3 minutes
  4. Let the dough rest for 15 minutes.
  5. Pull acron-sized chunks from the dough and line them up on a plate or cutting board
  6. Heat 2-4 T of oil in a pan
  7. Place the chunks in the pan and let them fry until brown on one side
  8. Turn the chunks and brown on the other side.
  9. Throw in about 1/4 cup water, cover and let steam.
  10. Either add to your favorite dish or put in the fridge or freezer for future use.
